Butter Milk Cottage Cheese

These crepes with cottage cheese and berries pack more protein into breakfast than you'd expect from something this light and easy to make. Cottage cheese goes into both the batter and the filling, adding protein and creaminess in a way that blends completely into the finished crepe. No grainy texture, no compromise on flavor.

The result is a genuinely satisfying breakfast that holds you over through the morning and still feels like a treat with fresh berries, a dusting of powdered sugar, and a drizzle of maple syrup. Ten minutes of prep and a quick batter rest are all it takes.

For Filling

  • 1/2 Cup Cottage Cheese
  • 1 Teaspoon Honey
  • 1/4 Teaspoon Orange zest
  • 1/2 Teaspoon Vanilla Extract

Garnish

  • Strawberries , sliced
  • Raspberries
  • Confectioner’s Sugar (Icing Sugar)
  • Maple Syrup

Directions:

  1. Prepare the crepe batter: Combine the cottage cheese, eggs, flour, salt, honey, melted butter, vanilla, and milk in a food processor or high-powered blender. Blend until fully combined. The batter should be relatively thin. Add a tablespoon of milk or two as needed. Transfer batter to a bowl and allow it to rest for 10 minutes.Whole eggs, milk, and flour inside a food processor before blending.
  2. Prepare the filling: Meanwhile, clean the food processor or high-speed blender and add all of the filling ingredients. Blend until smooth and transfer the filling to a small bowl.Cottage cheese, orange zest, and honey inside a food processor before blending.
  3. Cook the crepes: Heat a small, nonstick pan with low sides over medium heat. Add a small amount of butter or oil. Drop 1/4 cup of batter into the center of the pan and tip the pan in circles to coat the entire surface. Cook for 1-2 minutes, until the edges are dry and crispy and the bottom is golden. Use a spatula to carefully flip the crepe and cook for another minute. Transfer the crepe to a platter and repeat the process with the remaining batter.Crepe batter cooking in a black skillet next to a bowl of extra batter.
  4. Assemble the crepes: To assemble, place a warm crepe on a plate and spread a small amount of filling in the crepe. Fold the crepe into fourths and top with fresh berries, a dusting of powdered sugar, and a drizzle of maple syrup.Close-up view of folded crepes filled with cottage cheese blend and garnished with raspberries.
