Ingredients:
Directions:
- Sauté garlic in olive oil in a large skillet over medium heat. Add olives, lemon zest and vodka and cook, stirring frequently, until fragrant, 3 to 4 minutes, until reduced by about half.
- Add the pasta, Parmesan, cream and olive brine. Cook, tossing constantly until pasta is coated and sauce is emulsified, about 2 minutes.
- Stir in butter until butter is melted; season with salt.
- Top with more Parmesan, parsley and blue cheese crumbles before serving.
Note:
Gin can be used in place of vodka for a slight juniper flavor in the sauce.
