Ingredients:

  1. Combine roasted red peppers, toasted almonds, garlic, smoked paprika and 1 tablespoon of olive oil in a blender or food processor and pulse to form a thick paste.
  2. Add Greek yogurt and blend until the mixture has a smooth, saucy consistency.
  3. Heat remaining tablespoon of oil in a large skillet over medium heat. Add zucchini noodles and cook, stirring occasionally, until cooked through, about 5-7 minutes.
  4. Lower heat to a simmer and add sauce, tossing until the sauce is evenly distributed and heated through. Season with salt and pepper to taste.
  5. Garnish with ricotta salata cheese crumbles and fresh basil before serving.
